Recipe: Greek Dips

Tzaziki
Ingredients
250 ml of hang plain yogurt
3 cucumbers, grated
4 crushed garlic cloves (to taste)
100 ml olive oil
50 white wine vinegar
1/4 bunch dill, chopped
Salt (to taste)
Method
Add all ingredients in a bowl and mix well
Refrigerate overnight
Serve with warm pita bread |

Taramasalata
Ingredients
100 g Tarama*
½ brown onion, finely grated
250 ml olive oil
Juice of ½ lemon
1 clove garlic
100 g bread crumbs
Soda water
Method
Add a small amount of soda water to the bread crumbs to form a thick paste.
In a food processor, add tarama, onion, garlic, bread crumb paste and lemon juice
Mix well, then slowly add olive oil (like your making a mayonnaise)
Serve with warm pita bread.
* Tarama is smoked cod fish roe
Skordalia
Ingredients
250g of mashed potatoes
4 garlic cloves, crushed
Juice of ½ lemon
250ml olive oil
Salt (to taste)
Method
Add all ingredients in a bowl and mix well
Serve with warm pita bread
